Spinach, Cashew Soba Noodles Recipe


1 tsp honey
1 tbsp cider vinegar
2 tsp soy sauce or Bragg
2 tbsp sesame oil
1 garlic clove (minced)
4 oz soba noodles
1 bag baby spinach
1/2 cup cashew (chopped)
pepper flakes or chili (optional)

1. Mix honey, soy, and vinegar in a small bowl
2. Broil water, add noodles, and cook until tender, then drain
3. Place spinach in a large bowl. Immediately pour noodles onto the spinach. Use the heat of the noodles to wilt the greens.
4. Stir in the sauce mixture, garlic, sesame oil, cashew, and chili. Add more soy sauce or salt if necessary.
