Garbanzo Bean Salad with Mint

1/4 red onion (or 2 green onions), diced
1 can garbanzo bean, rinsed and drained
2 tomatoes, diced
1 cucumber, diced
1 lime, juiced
1 tbsp olive oil
2-3 sticks of mint, finely chopped
1 garlic clove, pressed (optional)
1/2 bell pepper, diced (optional)
1 head of romaine (optional)

Mixed all ingredients together and serve over romaine or any other bed of greens.  Enjoy as a side, salad, or snack.  Chilling the salad (without the romaine) for at least 15 minutes gives it time to soak in the flavors.  Can store in the frig for 3-4 days.
